Drag sideways any number field Changes the value a step at a time; a field with a fixed range sweeps the whole of it in about twice the field's width. One drag is one undo step.
Middle-drag sideways any number field or dropdown The same from the middle button, one step for every 8 pixels.
Hold Shift and drag any number field A tenth of the speed, for fine changes.
Hold Ctrl and drag any number field Ten times the speed.
Click a chevron any number field One step; hold it to keep stepping.
Click any number field Type a value. Enter commits it, Esc puts it back.
Scroll a number field or dropdown that has focus One step per notch. Notches that follow each other quickly are one undo step. Without focus the scroll moves the panel instead, so nothing changes by accident.

The pointer changes shape to say what a drag will do before you press. A trim pointer sits at a clip's edge and a roll pointer on a seam. An open hand sits over a top strip or a song bar's body. Left and right arrows sit over the playhead, a song's ends and a fade handle, and up and down arrows over a song's level line. See Arrange clips and Music.
